Butternut Squash

My favorite this week is butternut squash from Sam's Club.  You can buy it already cubed.  Toss it with about a tablesoon of coconut oil or olive oil and roast it at 425 or so for about 30 minutes.  Shake the pan about every 10 minutes.  It should get a little browned and crispy on the outside and soft inside. Sprinkle with cinnamon, salt, or eat it plain.
 
For those of you doing honey or maple syrup it is really yummy if you toss in a tablespoon with the oil.
